Instructions
  1. Combine all the marinade ingredients into a bowl and mix thoroughly.
  2. Cut pork into bites (2cm width squares) and put in the bowl. Combine and coat the pork with marinade and let sit for minimum one hour or, even better, overnight.
  3. Heat a large frying pan over medium heat. No oil. Cook pork in the marinade. It will simmer in the liquid initially for about 10 minutes and once the water/liquid evaporates the pork will turn sticky. Stir occationally and lower heat at end or it may burn.
  4. Ideas for garnish: spring onion, chopped chilli, sesame seeds, Thai basil, koriander.

Serve with rice and Korean Cucumber Salad

Turn leftover pork into a delicious wrap by rolling it up in flour tortillas with cucumber wedges, shredded iceberg lettuce and spring onions.
