Instructions
  1. Chop finely or slice thinly as you prefer. The image shows the thinly sliced with Mandoline
  2. Coat the bottom of a thick-bottomed sauté pan with the olive oil (and butter if preferd). Heat on medium-high heat until the oil is shimmering
  3. Add the onions and stir to coat with oil, bring down to medium-low (30%) heat and let cook, stirring occasionally
  4. Let cook for 45-60 minutes, stirring every few minutes until the onions have a rich, golden color. You might have to add a little oil or water. At the end you might want to add balsamic vinegar to bring some additional flavor to the onions
  5. Store refrigerated for several days in an air-tight container

You can use onions prepared this way on top of a steak, to chicken, onion soup, pizza topping, hamburger topping... Caramelized onions add to almost any dish, this is an ingredient that will take your cooking up a notch or two.
