Lovely creamed leeks mixed with spinach and cheese, this is the ultimate indulgent side dish

Ingredients
- 2 Leeks medium size, rinsed and cut in pieces*
- 2 tbsp Olive oil
- 2 dl Cream heavy
- 200 g Spinach
- 50 g Goat cheese chèvre
- 1 pinch Salt
- 2 pinches Black pepper freshly ground
- 0,5 Stock cube vegetable
- 1 dash White wine dry

Instructions
- In a small saucepan on medium/high heat, add cream, wine and stock cube and bring to the boil. Reduce by 50% and set aside
- Simultaneously, put a large sauté pan on medium heat drizzled with oil and add leeks. Gently fry a few minutes, until softened but not colored, stirring occasionally
- Over low heat, add cream, salt, pepper and goat cheese to the leeks. Once combined fold in spinach
- Serve immediately
Recipe Notes
*White and green parts, excluding root and any dry parts in top of green end
Goat cheese can be substituted with Parmesan if preferred
A perfect side dish to fish, red meat, chicken and pork
