Instructions
  1. In a small saucepan on medium/high heat, add cream, wine and stock cube and bring to the boil. Reduce by 50% and set aside
  2. Simultaneously, put a large sauté pan on medium heat drizzled with oil and add leeks. Gently fry a few minutes, until softened but not colored, stirring occasionally
  3. Over low heat, add cream, salt, pepper and goat cheese to the leeks. Once combined fold in spinach
  4. Serve immediately
Recipe Notes

*White and green parts, excluding root and any dry parts in top of green end

Goat cheese can be substituted with Parmesan if preferred

A perfect side dish to fish, red meat, chicken and pork
