- 3 pcs Shallots finely chopped
- 2 tbsp White wine vinegar
- 1 dl White wine
- 250 g Butter knobs
- 1 tbsp Lemon Juice
- 1 tsp Salt
- 0,5 tsp White pepper Gound
- 200 g Green peas Frozen

Instructions
- Put the green peas in a pot of salted boiling water and let simmer for one minute
- Drain the water and push the peas through a fine-meshed sieve to a silky texture. Set aside
- Reduce wine, pepper, vinegar, lemon juice and shallot in a saucepan over medium heat until reduced to 2 to 3 tbsp
- Pour reduction through a medium-mesh sieve, discard shallot and put back into pan
- On low heat, add knobs of butter, whisking constantly, not adding new knobs before the previous ones have liquefied
- Remove from heat, whisk in green-pea-mixture and season to taste with salt and pepper. Serve immediately
