  1. Put the green peas in a pot of salted boiling water and let simmer for one minute
  2. Drain the water and push the peas through a fine-meshed sieve to a silky texture. Set aside
  3. Reduce wine, pepper, vinegar, lemon juice and shallot in a saucepan over medium heat until reduced to 2 to 3 tbsp
  4. Pour reduction through a medium-mesh sieve, discard shallot and put back into pan
  5. On low heat, add knobs of butter, whisking constantly, not adding new knobs before the previous ones have liquefied
  6. Remove from heat, whisk in green-pea-mixture and season to taste with salt and pepper. Serve immediately
