Ingredients
- 3 cans Black beans 3x400g
- 3 pcs Yellow onions pealed, minced
- 6 pcs Garlic cloves pealed, minced
- 1 bunch Cilantro finely cut, incl stems
- 1 bunch Parsley finely cut, incl stems
- 300 g Smoked pork belly finely cut
- 1 tbsp Cumin
- 3 tbsp Olive oil

Instructions
- Heat the oil in a casserole and saute the onions, garlic, cilantro, parsley, pork and cumin for 30 minutes.
- Tip in the beans, including the liquid and a pinch of salt. Cook everything together for at least one hour.
- Depending on the texture you prefer, either mash them roughly or blitz them using a blender
- Will keep chilled for up to three days or frozen for a month. Reheat with a splash of water mixed in.
