  1. Heat the oil in a casserole and saute the onions, garlic, cilantro, parsley, pork and cumin for 30 minutes.
  2. Tip in the beans, including the liquid and a pinch of salt. Cook everything together for at least one hour.
  3. Depending on the texture you prefer, either mash them roughly or blitz them using a blender
  4. Will keep chilled for up to three days or frozen for a month. Reheat with a splash of water mixed in.
