Asian Style Peanut Sauce

Ingredients
- 1 tbsp Peanut oil
- 2 pcs Garlic clove minced
- 1 pcs Yellow onion large, finely chopped
- 1 tbsp Sambal Oelek
- 1 tbsp Coconut sugar or any brown sugar
- 2 tbsp Soy sauce light
- 1 tbsp Ketjap mains or any sweet soy
- 4 tbsp Peanut butter
- 4 tbsp Peanuts toasted, unsalted, finely crunched
- 2 tbsp Lime juice
- 2 tsp Salt
- 1 tsp Black pepper ground
- 1 can Coconut milk 400 ml/ 13oz

Instructions
- Heat oil in a saucepan and gently fry garlic and onion over medium/low heat for about 15 minutes
- Add all other ingredients except coconut milk and stir through. Let cook for 5 minutes
- Add a little coconut milk at a time stirring consistently
- Can be served immediately, but will improve if left to sit for 30 minutes
