Peanut oil

Yellow onion
large, finely chopped

Sambal Oelek

Coconut sugar
or any brown sugar

Soy sauce

Ketjap mains
or any sweet soy

Peanut butter

toasted, unsalted, finely crunched

Coconut milk
400 ml/ 13oz
Instructions
Heat oil in a saucepan and gently fry garlic and onion over medium/low heat for about 15 minutes
Add all other ingredients except coconut milk and stir through. Let cook for 5 minutes
Add a little coconut milk at a time stirring consistently
Can be served immediately, but will improve if left to sit for 30 minutes
